One Family. One Home. The Taste of Time.
For more than a century, the balsamic tradition has been passed down through generations of the Iotti family.
In the heart of Emilia, in Rio Saliceto, Acetaia Castelli preserves a family tradition rooted in balsamic vinegar, cooked grape must and the patient work of time.
For generations, the family has carried forward a passion born among vineyards, wooden casks and knowledge passed down over time, transforming a family legacy into a production enterprise that tells the story of its region through authentic, carefully crafted and distinctive products.

Family Story More Than a Century Old
The Iotti family's passion for aged vinegar goes back at least a century.
A story of memories, patient gestures and casks kept in the attic, where time became an essential ingredient.
Over the years, this tradition has been passed down and nurtured, becoming the heart of Acetaia Castelli: a family-run agricultural business that today brings together heritage, expertise and a vision open to new markets.

A Farmhouse Transformed into a Vinegar House.
A farmhouse around 130 years old, restored to accommodate the unhurried pace of maturation.
Within its walls, the casks find the ideal conditions to mature.
The attic follows the rhythm of Emilia’s seasons; the showroom and tasting area welcome customers, professionals and enthusiasts.
Grapes, Wood, Patience.
Every Detail Leaves Its Mark.
Care begins in the vineyards and continues at the vinegar house, through the cooking of grape must, maturation and refinement. Each stage contributes to the aromatic profile of the final product.
01
The Grape Must
The grapes are gently pressed. The must is cooked over direct heat, concentrating aromas, sugars and the character of the region.
02
The Casks
Oak, chestnut, cherry, mulberry, pear, acacia and juniper each bring their own nuances to the maturation process.
03
Time
Seasons, transfers between casks and tastings guide the master vinegar maker's work, until the right balance, density and lingering finish are achieved.
Only What Is Needed.
Everything That Matters.
Cooked grape must and, for some products, wine vinegar: a simple composition that lets the ingredients speak for themselves.
